Warm salad with squid
Warm seafood salads are remembered when it's time for fasting. A salad with squid and pasta shells can be made in 20 minutes. The dressing consists of tomato sauce and onion fried in olive oil. For curly pasta, this is a familiar combination, the tomato flavor goes well with flour shells. But the taste of the dish is literally transformed when olives and squid get into the salad. A warm salad with squid will make a hearty dinner and remind you of Mediterranean cuisine.
Products: squid – 2 carcasses, olives – 80 g, pasta-shells – 200 g, onion – 2 pcs., tomato sauce – 100 ml, olive oil – 30 ml, salt – 1 tsp., flax seeds (optional) – 1 tsp.
The cooking sequence:
1. Add pasta shells made from durum wheat to the salad.
2. Squid carcasses are a capricious product. If the boiling time lasts more than 3 minutes, the carcasses become stiff and shrink in size. Preliminary preparation is carried out quickly: thawed carcasses are cut, the insides are cleaned, and the outer film coating is removed. Wash the carcasses in cool water.
3. Carcasses are thrown into boiling water for 2 minutes. You don't need to salt the liquid, the squid will get its share of salt from the salad dressing. Warm carcasses are cut into thick strips.
4. Put the shells in boiling salted water, cook for 10-12 minutes, drain the water. Durum wheat pasta does not require further rinsing.
5. Onions are cut into half rings and stewed in olive oil until transparent. You do not need to fry the onion, it should remain soft.
6. Remove the pan from the heat. Mix the onion with the tomato sauce. In addition to tomatoes, the sauce contains ground vegetables: carrots, bell peppers, chili peppers. If there is no ready sauce, you can put out 1 carrot, 1 sweet pepper, a third of a pod of bitter pepper. Then beat the vegetables with a blender and mix with 2 tablespoons of tomato paste and half a teaspoon of salt.
7. Add the sliced squid to the pan.
8. Add shells. The pan is returned to the stove. The salad is mixed and heated for 1-2 minutes. The salad should not become slightly warm.
9. Turn off the fire. Whole pitted olives are added to the salad.
10. Warm salad is immediately placed on plates, sprinkled with flax seeds.
11. Seashells are large pasta products, when they cool down, they become a little harsh. If the salad is cold, it should be slightly warmed up without adding oil. Warming up in the sauce, the shells regain their former taste, and moderate warming practically does not affect the squid.
